Oat Slice

Homemade goodness! A great alternative or in addition to bringing along store bought muesli bars. I make batches of these and stick them in the freezer for snacks at home, work and hiking!

You will need:

  • 1 cup wholemeal self raising flour

  • 1 cup rolled oats

  • 2/3 cup fine desiccated coconut

  • 2/3 cup chopped dates

  • ½ cup dark chocolate chips

  • ¼ cup honey (maple syrup or golden syrup will also work)

  • A few drops of vanilla essence

  • 1 egg

  • 125g of melted butter

  • 1 teaspoon of cinnamon

  • 1 scoop protein powder (optional)

Method:

Step 1:
Preheat the oven to 180 degrees celsius.

Step 2:
Grab your mixing bowl and stir in all your dry ingredients, starting with the oats, flour, coconut, cinnamon and protein powder.

Step 3:
Add in your melted butter and stir that through. You can then add your egg, vanilla essence and honey. Give the mixture another quick stir and then add in the chocolate chips and dates. The consistency of your mixture should be fairly moist so that the bars are not super crumbly when they are cooked. If you find your mixture seems a little dry, you can add in some water.

Step 4:
Line your baking tin with oil spray. You can also use baking paper if you prefer. Place your mixture in the baking tin and firmly pat down the mixture. Place it in the oven for about 30 minutes or until you notice the bars becoming lightly browned on top.

Step 5:
Take your bars out of the oven and let them rest for a moment. I find it easier to cut the bars while they are still hot. Cut the bars into any size you like, I usually cut about ten bars. Once they have cooled down, you can remove them from the tin. You can store these in an airtight container or even in the freezer, so you’ll always have a snack on hand.
