Dehydrated Pho
You will need:
250g Rice Noodles (or 4 servings)
350g Mushrooms
1/2 Spring Onion
2 x Pak Choy
2 Large handful of Spinach.
200g of Veal or Lean Beef schnitzel
2 1/2 Tsp Ginger Power
2 1/2 Tsp Stock Power
Method:
Step 1:
Wash and prepare your vegetables. Cut the spring onion into small pieces, about half a centimetre to a centimetre and thinly slice the mushrooms. For the pak choy, cut the very bottom of the stalk off and discard. Cut the leaves off the stems to dehydrate separately, as they are different thicknesses they will take a different amount of time in the dehydrator.
Step 2:
Prepare the meat. Find the leanest veal schnitzel available as fat does not go well in the dehydrator. Chop into thin bite size pieces removing any fatty parts as you go. Heat up your pan and put your meat on. Cook your meat without using any oil. Once cooked, put it into a strainer and pour boiling water over it. This also helps remove any of the fats. Rinse the meat under warm water under the tap until it does not feel greasy on your hands.
Step 3:
You are ready to dehydrate. Grab your previously prepared vegetables and meat and evenly space them out onto the dehydrator. The spinach, pak choy leaves and spring onion will dehydrate the fastest, Followed by the mushrooms, meat and pak choy stems. Set your dehydrator to its highest setting and come back every few hours to see how they are going and rotate your trays.
Step 4:
You know the vegetables will be done as they will become quite brittle, especially the spring onion and the leaves. You'll have to be careful not to snap them completely. The meat should be like beef jerky. Remove from the dehydrator and seperate each component onto a different plate for packaging. You can either package them in a ziploc bag or vacuum seal them. This recipe makes roughly 4 serves. Another way to calculate this is by weighing about 60 to 90 grams of dehydrated food per serve. Once you have divided up the food into your bags you can add in the ginger powder, stock powder and rice noodles. Remember to write the date and description on the packaging. You can store these in the fridge or the freezer until your next trip.
To rehydrate:
Boil enough water so that the water line will just cover your food. Once boiled, put the food into your cooking pot and let it sit covered for around 10 minutes. You can add more water if you want to make it more soupy.
