Dehydrated Vegetable Quinoa
You will need:
Creates 4 servings
1 cup quinoa
2 cups vegetable stock (1 heaped tsp into 2 cups of water)
½ spring onion
½ tbsp garlic powder
½ tbsp mixed herbs
vegetables of your choice I will be using:
250g mushrooms
140g spinach
a few small eggplants
1 capsicum
Method:
Step 1:
Place 1 teaspoon of vegetable stock powder in a jug and dissolve with 2 cups of boiling water.
Step 2:
Rinse the quinoa a few times under cold water and put in into a saucepan. Poor in the vegetable stock and place it on a low heat until the quinoa is cooked and the water is absorbed. Add in the garlic powder and mixed herbs at this stage while it is cooking.
Step 3:
Wash and prepare your vegetables. You can pat dry your vegetables with a paper towel to get rid of any excess water. For most vegetables you will want to cut them into thin slices. No bigger than ¼ inch thick.
Step 4:
The dehydrator. Grab your vegetables and evenly space them out onto the dehydrator. If the holes on your dehydrator are too big, you can place parchment paper or aluminium foil on the tray. Alongside the vegetables, place your cooked quinoa onto sheets of aluminium foil and place onto the dehydrator. Set your dehydrator to its highest setting. Drying times may vary for each element, so it is best to check back every 2 hours and rotate your trays.
Step 5:
You know the vegetables will be done as they will become quite brittle and the quinoa will be quite hard. Now you are ready for packaging. I seperate each element into a bowl and place it on the bench. Because this recipe serves 4, I will divide each element into 4 servings. You can either package them in zip lock bags or vacuum seal them. Add in another ¼ teaspoon of vegetable stock into each bag if you wish. You can add in any other spices you might like here too. Remember to write the date and description on the packaging. It is best to store these in the fridge or freezer until your next trip.
To rehydrate:
Boil enough water so that the water line will just cover your food. Once boiled, put the food into your cooking pot and let it sit covered for around 10 minutes.
